2. Choose a city to start

Marcel and his partner Andrei Mamon are former top managers of a well-known pizzeria chain. They advise opening fast food in the regions - there is a huge competition in the capital, therefore, without experience and millions of marketing budgets, it is easy to burn out. The partners chose the city of Dolgoprudny. It is located in the Moscow region, from which you can deliver pizza to a part of Khimki and part of northern Moscow. Other pizzerias were also opened in small towns: Lobnya, Zheleznodorozhny, Belgorod.

Marseille recommends that aspiring entrepreneurs pay attention to the northern cities where oil and gas are produced. There are not such strong competitors, as in Moscow or St. Petersburg, and the population has money. A good city to open a new fast food - a millionaire in the regions.

3. Find a location

You can look for a room on Avito, but it's better to walk and look for rental signs. According to Marcel's experience, not all owners in the regions use the Internet, most work offline. To find premises for the first Bizon Pizza, Marseille moved to Dolgoprudny.

A good location is no guarantee of success: Marseille changed three premises for good reasons.

The first room was in the basement, but the sewerage broke through there and the contract had to be terminated. Do not rent basements - this may end in a flood.

Difficulties arose in the second room when we signed contracts with the owner. He did not answer questions and tried to sign the contract as soon as possible. This became an alarming signal - if the owner does not want to cooperate already at the stage of signing the contract, it can only get worse in the future. So I had to abandon the lease and look further.

The third room was on the second floor of an office building. There were enough parking spaces and the possibility of converting the office into a food premise. Marcel stopped at this option.

While looking, came across a lot of rooms in residential buildings. They are not suitable for public catering - there may be problems with residents and, most likely, there will not be enough capacity. A pizzeria needs 30-50 kW of electricity per hour, and in an ordinary house - up to 10 kW per hour.

4. Make repairs

Neutral equipment - all furniture in the kitchen: racks, shelves, sinks.

You can open a pizzeria only in the food room. This means that water, sewerage and ventilation are provided, there is an inflow of air from the street and an extractor hood is installed. When the premises for Bizon Pizza were being renovated, the electrics were completely replaced and sockets for equipment were added, and the ventilation was carried out from scratch. The walls and floor of the hot and cold shops were tiled. Put new technology so as not to let you down. Neutral equipment bought second-hand. Installed a fire alarm and fire extinguisher. At the end of the repair, Rospotrebnadzor and the fire service were notified of the opening of a new point.

5. Hire staff

Pizzeria staff can be found on Avito, rabota.ru and zarplata.ru. Marcel found the first employees for the new pizzeria in two weeks - two drivers and three all-round chefs. Now five drivers and five cooks work at the point, one of them is a senior manager.

Marseille's system suggests that generalist chefs do more than just cook. In addition, they clean and communicate with couriers. The senior cook also performs the work of a manager: he helps to control the rest of the employees. As a result, five people cope with everything.

6. Create a contact center

A contact center is an optional step for opening a pizzeria. Marcel created it to develop the network. Some large companies there is no contact center, and cooks take calls at the pizzeria. This can have a negative impact on the service: the employee prioritizes making pizza over communicating with the client, and may miss a call in a hurry. 7. Launch the site

In accordance with clause 3 of the Government Decree “On the notification procedure for the commencement of certain types of entrepreneurial activity» dated July 16, 2009 No. 584, catering establishments should apply with a completed notice to the territorial body of Rospotrebnadzor. A notification can be sent only after state registration and registration with the Federal Tax Service Inspectorate of a legal entity (or individual entrepreneur), but always before the start of activities (clause 5, article 8 of Law No. 294-FZ).
